Hi guys! While I was in Gurgaon, I made these cookies. It was something I never tried before but intended to.
A very soft texture, with a slight flavour of brown butter along with the melted chocolate chunks!
Starting with the recipe,
1/2 cup unsalted butter
1/4 cup granulated white sugar
1/4 cup brown sugar
1 tsp vanilla essence
1 cup flour
1/4 tsp baking soda
1/2 tsp baking powder
1/4 cup chopped milk chocolate
1/4 cup chopped dark chocolate
First, in a pan add the unsalted butter and on low flame let it melt. It will start to bubble up. Browning the butter takes a while and depends on the type of pan and amount of butter.
So, take a wide pan for the process to happen quickly. After a few minutes, it will foam up and become in a pale colour. You need to cook the butter until it is the similar colour of tea.
Add an ice bath under the butter and start whisking it. Due to the cold temperature of the bowl, butter will start to firm up meanwhile retaining its flavour.
Add vanilla, sugar and mix it very well.
Then add the flour, baking soda and the baking powder.
When the dough comes together, add the chopped chocolate. If baking powder and soda was not added then this would have been an amazing recipe of edible cookie dough..
Refrigerate for half an hour and pre heat the oven at 170 degree C. Use a scoop to take the dough and place on a baking tray lined with parchment.
Bake for 15 minutes on 170 C and then for 5 minutes on 180. let it cool completely and enjoy!
I hope you liked the recipe and let me know your thoughts in the comments. For a video recipe, check out my Instagram page!
