Hey everyone! I hope you had an amazing holi! I made a tres leches in the flavour of thandai.
Tres leches is a cake that is soaked in 3 types of milk until it gets extremely soft and juicy to eat.
It is topped of with whipped cream and served cold.
5 tbsp thandai powder( directions below)
3/4 cup sugar
1/3 cup oil
3/4 cup curd
1 tsp cardamom powder
a few strands of saffron
1 1/2 cup flour
1 1/2 tsp baking powder
3/4 tsp baking soda
1/2 cup milk
3 tbsp condensed milk
3 tbsp milk powder
chopped dry fruits for garnish
First, add 3 tbsp almonds, 3 tbsp cashews, 2 tbsp pistachios, 2 tbsp melon seeds, cardamom to a blender jar and make a fine powder.
Then, add sugar, oil, curd and cardamom to a bowl and whisk well.
Dissolve some saffron in 2 tsp of milk and add it to the curd mixture.
Sift in flour, baking powder and soda to the wet ingredients. Fold gently to get a thick batter like this.
Grease a 7 inch square pan and add the batter in. Bake in a preheated oven at 180 degree C for 30 minutes.
In another bowl, add milk powder, regular milk, condensed milk and the thandai powder. Mix well and refrigerate.
When the cake is still warm, poke holes with a fork and pour the milk mixture over it. Refrigerate for at least 3 hours.
I have decorated the cake using whipped cream, sliced almonds and gold leaf. Serve cold!
