Chicken lababdar: Happy Father’s day!

Welcome to Little Chef’s Apron! Today, we will be making a chicken recipe after so long! I can’t remember the last time I posted a non veg recipe. The chicken recipe I made today, is chicken lababdar which is a very famous north Indian dish.

As, today is Father’s Day, I am making this recipe.

We had it for lunch and it was incredibly delicious. If you eat chicken then this is the perfect recipe for you to try out.

It was fun to make it and the fun was increased by the occasion as well.

Starting off with the recipe,

Ingredients for gravy:

2 roughly chopped onions

3 roughly chopped tomatoes

2 tbsp ginger garlic paste

4 tbsp oil

1 tsp Indian masalas like garam masala, cumin powder, red chilli powder, coriander powder, salt

Whole masalas like bay leaf, cinnamon stick, cardamom

A little bit of cashew nuts

1 tbsp cream

1 tbsp dried fenugreek

Ingredients for marination:

500 gms bone/boneless chicken

2 tbsp curd

Spices mentioned earlier and salt

2 tbsp ginger garlic paste

Directions:

First, add the washed chicken and all the ingredients required for marination in a bowl.

Mix it well and let it marinate overnight. If you want, you can leave it for two hours as well but overnight would give better flavor and texture.

Now, in a pan add half of the oil mentioned . Add in the onions and ginger and garlic.

Fry until 2-3 minutes and then add the tomato. Let it fry for a few minutes and add the cashews. Also add the powdered spices and whole masalas.

Cashews are there to balance the sourness of the tomatoes. then, let it off the flame. After it is cooled, blend it finely in a blender jar. It would be very thick so use water to thin it out.

Add the rest of the oil in the pan and add this gravy along with salt.

Next, add the marinated chicken and some water. Approximately ½ cup. Cover and cook for 15 minutes or until the chicken is completely cooked.

Also add some cream and dried fenugreek ( kasuri methi) to finish off the dish. Serve hot with naan or roti!

    Uhm, I prefer barbecue actually because i dont know why but it tastes more smoking and tasty, i guess?

    Hope you had a nice Father’s Day. I will definitely make this recipe using chicken I have in the freezer on the days we don’t use the veggie boxes ( weekly online delivery with recipe and all ingredients lasting four days)
