Welcome to little chef’s birthday world! Today I am sharing a very special recipe because it is my mom’s birthday! We planned so much and I tried to make a two tier cake this time. It was a very new thing for me to try and it was super fun!
As there are two tiers, explaining both of them would lead into a very long post. I will explain in detail for one and the other one is done in a similar way.
Ganache: ingredients
250 gms dark chocolate
120 gms fresh cream
Directions:
First add chocolate in a microwave safe bowl and heat it for 30 seconds.

Then add cream to it and mix well. Heat until fully melted and stir well.

Let it sit at room temperature for about 6-7 hours until the chocolate is set.
Cake:ingredients
1/3 cup + 2 tbsp oil
1/3 cup+2 tbsp fresh curd
¾ cup powdered sugar
1.5 tsp baking powder
¾ tsp baking soda
1 ½ cup all purpose flour
1 tsp cocoa powder
1 tsp coffee powder dissolved in a tbsp of water
Milk as require1 tsp vanilla
Directions:
First, whisk together sugar, oil and vanilla. Then add in the curd and mix well.


Now, sieve in flour baking powder and soda. Once it is done fold in the dry into wet ingredient gently.

Add the coffee and mix well. Now add milk as required to make a smooth batter. Add these in both the tins that are oiled and dusted with flour. I am using 6 inch and 4 inch pans.


Now, bake them in a preheated oven at 180⁰C for 30-40 minutes or until a toothpick inserted comes out clean.

Let them cool completely before frosting.
Frosting and assembly ingredients:
1tsp sugar
1 tsp coffee powder
2 tbsp water
Directions:
First, slice the cake into two layers or even three if you want to.
Mix together coffee, sugar and water and soak the first layer with this syrup. Then, add the ganache in a piping bag and put it on top of the layer.
Repeat the process for the next layer and coat the cake thoroughly with ganache. I am doing the same process for the smaller cake but with white chocolate ganache.


Take sturdy straws and cut them exactly at the height of the bottom cake. Insert 3 of them into the middle of the cake.

Now, add the smaller cake carefully on top and decorate in whatever way you want.
I am using chocolate decorations, caramel syrup, biscuit crumbs etc !

I’ve tried baking cake many times before but it becomes a bit sour (maybe I add too baking soda/powder). Can you help me with this please?

Thank you Jahnvi. Do let me know if you do! That’s alright. We can surely figure out. As far as I know, baking soda won’t add a sour taste. Of course it would change the texture if you add a lot of it but not sour. Do u use curd? Maybe ur curd is sour or do u use vinegar while making cake?
