Welcome to little chef’s apron! Today , my sister and I made a valentine’s day candlelight dinner for my mom and dad. We wanted to do something special this time and we thought of this.
. ice black currant lemonade
. rosemary and thyme grilled potato wedges
. sweet corn soup
. Extravagant salad
. Veg noodles
. mini chocolate mousse cakes
. And my sister decorated the area with balloons, candles etc.
For today, we will focus on mini mousse cakes and Manchurian and we will talk about the others in the next posts.
½ cup of each vegetables
( you can use ANY VEGETABLES that you have available.)
I am using beans,onions, 2 kinds of capsicum, carrot and cabbage
2 tbsp corn flour
2 tbsp all purpose flour
3 tbsp chilli sauce
2 tbsp tomato puree
2 tsp soy’ sauce
2 tbsp chopped ginger and garlic
2 tsp oil
Oil to fry
Seasonings of your choice
First, chop the vegetables very finely and mix them all together.
Then, add in the salt according to taste and the cornflour and flour. Mix it all up and bind the mixture together.
Then, make balls out of this mixture and fry them in medium hot oil.
Then, in another pan, add oil and fry ginger and garlic in it. Add in some other vegetables like onions and capsicum and fry them too.
Then, add the sauces and cook them with corn flour slurry.(it is basically cornflour dissolved in water)
Cook until it thickens and then add in the fried balls. Give it a mix and serve!
Mini mousse cakes:
When, I think about valentine’s day, chocolate and ice cream strike my mind the first….
Which is why I combined both of them and thought of this:
1 cup whipping cream for mousse
½ cup cream (heavy, whipping or fresh cream)
1 tsp gelatine dissolved in 1 tbsp cold water( optional)
1 cup chopped chocolate compound (dark+milk or either one)
Biscuit crumbs and 2 tbsp melted butter( optional but read until the end to know more about this.)
2 tsp cocoa powder
½ tsp coffee powder
So, usually for mousse cakes, there are metal moulds in which you add the mixture and pull it out once they are set.
But, as I didn’t have those, I made my own version with OHP sheet and parchment paper. It works great and you can try it too! If you are using the metal ones, then make the biscuit mixture for the base but not for the DIY’s….
First, add the cream over a double boiler and let it get heated. Then, add the chocolate and stir continuously until the chocolate is melted.
Once its done, place it in the refrigerator. For the biscuit mixture, add melted butter to powdered biscuit mixture and mix well.
Then, mix gelatine in cold water and let it bloom for 3-4 minutes. Microwave it for 10 seconds and keep it aside. YOU CAN MAKE IT WITHOUT IT ALSO BUT GELATINE GIVES A SLIGHTLY BETTER RESULT.
Whip the cream under an ice bath on speed 1 until it starts to thicken. Keep beating until stiff peaks form and add in the cocoa, coffee and gelatine mixture.
After mixing this completely, take a small portion and mix it gently in the ganache. Make sure to whip the ganache before adding the cream in.
Take the mould and place it in the serving plate and add the two mixtures in two different piping bags.
Pipe them into the mould in alternate manners and level the top with a knife or spoon.if you want, sprinkle some biscuits on the top.
Place this in the refrigerator for at least 6-7 hours and when it’s set, remove the mould and serve!!
