Welcome to Little Chef’s Apron! Today we’ll make something that is a delicious dessert of Indian cuisine. I will tell some tips and hacks with which you can make amazing laddoos.
The boondi:
Ingredients:
1/2 cup besan/gram flour
A little more than 1/2 cup water
2 tsp ghee
Oil to fry
Directions:
. First, add the gram flour in a bowl and mix it with ghee.

. Add the water slowly to avoid any lumps. Mix this batter thoroughly making sure there are no lumps.


. Place the oil in a vessel and make sure it’s hot enough but not smoky hot.
. To make the boondi, you would need a jaara but not all of us have that, do we? So you could also use this type of spatula used for frying. Very easily found in Indian homes.

. Keep the spatula a little high from the oil, and take about a spoon of batter and place it on the spatula. Keep spreading this batter through the spatula in a circular motion from a height.
. Do only about a spoon of batter at a time. Let them fry in the oil for about 30 – 45 seconds. If you do it more than that then they would become crisp and not soak the syrup.

. Strain the oil from the boondi from a strainer like this.

. Make all the boondi and keep it aside for the syrup.

The syrup:
Ingredients:
1/2 cup Sugar
A little more than 1/4 cup water
Cardamom powder( or any flavouring you’d like)
Directions :
. First, in a vessel or pan, add the sugar and water.
. Let the sugar dissolve and then add the flavour.
. Let it cook for till one string consistency is attained and till the syrup is a bit sticky.
. While the syrup is boiling on medium-high flame, add the boondi to this. Keep stirring and cook it for 2 minutes. Give a splash of water once or twice to create steam.

. Switch off the flame and cover this and let it sit for 20-30 minutes.
. If your boondi are not two crisp they should soak the entire sugar syrup. But if they are not there is a way to fix it.
. Strain these to remove excess sugar syrup and transfer them to a pan. . Switch on the stove and cook it for about 1 minute on high flame.

Assembly:
Ingredients:
. Melon seeds
. Chopped cashew nuts
. Little bit ghee
Directions :
. Mix in the melon seeds and cashew nuts together and add them to the soaked boondi.



. Grease your hands with ghee and take a section of boondi in your hands.
. Shape them with on hand to and fro until it forms a ball.
. Place them on a serving tray and garnish with any nuts of your choice.
