Welcome to Little Chef’s Apron! Today we’ll make something that some of us love with our heart while the others don’t prefer it. For the others I came up with vegetarian alternatives so everyone gets to enjoy these delicious recipes!
Chicken tikka:
Ingredients:
2 chicken breasts ( cut into pieces)
2 tsp spices ( chilli powder,salt coriander powder, turmeric)
1/2 cup yogurt/ curd( preferably hung curd
Coriander leaves chopped
2 tsp ginger and garlic paste
Vegetables chopped( optional but a must in the veg option)
2-3 tbsp mustard oil
Directions:
. First let the oil come to a boil in a pan and add all the spices to it. Because of the chilli powder and turmeric it should become blood red.
. Then, pour it into the curd and give it a good mix to get a smooth paste. Add all the other ingredients and mix it completely and then add the chicken.
. Let this marinate for about 45 minutes -1 hour.
. There are many ways to make this. You can pre heat your oven really hot at 190* for 20 minutes and then grill it , or you can let the oil get boiling hot on a grill pan. You can also barbecue it if you have a charcoal stand.
. If using an oven, then grill, it for 15 minutes and if you’re using a grill pan then don’t flip occasionally. Let it cook on one side and then flip it to the other side.
Serve it warm with lemon and mint chutney.

Veg alternative: paneer tikka
Directions:
The recipe is exactly the same for paneer tikka. The only difference is that instead of chicken are thick cut paneer/ tofu pieces and there are vegetables put on the skewer stick.

Butter chicken:
Ingredients:
Chicken tikka shown in the above recipe
1:2 onions and tomatoes( here I am using one cup chopped onions and 2 cups chopped tomatoes)
3 tsp chopped ginger and 4 tsp chopped garlic
2 tsp chopped green chilli
6-7 cashew nuts
1 bay leaf and 1 cinnamon stick
4 tbsp butter
2 tsp spices and salt
1 tbsp oil
1 tsp jeera/cumin
3-4 cloves
3-4 tsp fresh cream
1/2 cup water
Directions:
. First fry the garlic, ginger , bay leaf, cinnamon and the green chilli in the oil. After sometime, add the onions and gently fry them. Don’t let them to change colour.
. Now add the tomatoes and let it cook till there is a slight boil in it. At this point add the cashew notes and cloves and also the water. Cover it with a lid and set a timer for about 15 – 20 minutes and stir occasionally to ensure that this mixture is not sticking to the pan.
. Cook until the tomatoes and cashews are soft and also add the butter into this.
. Let it cool for 10 minutes and then add the salt. Blend this in a blender jar until you get a smooth paste of an orange shade.
. Transfer this into the same pan and take it out with a little water. While pouring, sieve it to get the smooth velvety texture. Cook this for some time and add the spices. You can add a little sugar but that’s totally optional.
. Add the butter and the chicken tikka. Cover this with a lid and let the chicken soak the gravy while cooking for 2-3 minutes on low flame.
. Add the cream and if you want you can add some crushed fenugreek leaves. Serve it hot and garnish with a coriander lead and cream.

Veg alternative: malai kofta
Ingredients:
This same gravy without the chicken
1 cup grated and boiled potatoes
1 cup grated paneer / tofu
1 tsp grated ginger
2 tbsp corn flour
1 tsp spices and salt
Coriander leaves
Pan full of oil
Directions:
. To make the kofta, make a dough out of the above ingredients but do not over knead.
. While making the balls out of it, make sure that they don’t have cracks or else they might burst while frying.
. Make sure that the oil is hot and the pour the loft as one by one . Fry till golden brown.
. Place these in a serving bowl and pour the curry over this.

Chilli chicken:
Ingredients:
Chicken pieces ( with bone or boneless)
2 eggs
1 tsp salt and pepper
1 tbsp oil
1 tsp chopped ginger
1 tsp chopped garlic
1 tbsp butter
3 tbsp sauces( chilli sauce, pasta sauce, tomato sauce, tomato purée)
1 tsp oregano and chilli flakes
2 tbsp corn flour and flour
Directions:
. First, marinate the chicken with the mixture of egg, flour, corn flour, salt , pepper and ginger. Let this rest for about 30-40 minutes.
. Prep a pan with a lot of oil for the chicken to be fried. Fry the chicken till it gets a golden brown coating.
. Take another pan and pour the sauces with salt and chilli flakes and oregano .
. Also add the fried garlic in butter to this and let it simmer for 2-3 minutes. Now add the chicken to his and give it a good mix. Add this pint you can also add vegetables if you want to.

Veg alternative: chilli potato
Ingredients:
Same sauce from above recipe
3 -4 large potatoes( not boiled)
Salt and 2 tbsp corn flour
Directions:
. For this we first have to make French fries. So cut the potatoes in a rectangle manner and coat them with corn flour.
. Fry them till they are crisp and transfer into the sauce.
